Nan curries pineapple curry
Something that I hold so close to me is this recipe my nan used to cook EVERY Christmas ~ something I've loved from quiet a young age! I wasn't sure whether i wanted to share it, but then I thought, my nan would be beside herself if anyone else loved this & cooked it for their family at Christmas or gatherings so here it is.Tag me if you make it #notallhealthy this is also #vegan #vegetarian ."Nan Curries curry" serves 2 - INGREDIANTS - Microwavable sunrice 250g brown riceCurry powder & Cummin (optional) Sultanas - Shallots - Frozen Peas - Fresh pineapple Or tinned (if using tinned keep the juice)Brown or white rice (I used brown) nan used white. METHOD - Cook rice & let cool then refrigerate. .Cook peas & rinse under cold water .Chop shallots & pineapple -place in bowl adding peas+ sultanas + 1 tblsp curry + 1tsp cummin Combine well- .Remove rice from fridge & combine all ingredients-If using tinned pineapple add in the juice and mix well with spoon .If using fresh, cut off an extra peice or 2 and blend in high speed blender with a touch of water. .Serve as s side dish or lunch .Best served cold.

Lemon & Date Choc Balls
..LEMON + DATE CHOC BALLS 🍋I wasn't sure what I liked - the focus on the protein ball in my hand OR the plate FULL of protein balls 🤔Either way there's like 3 left 🤣🤣.If you're an awful snacker like me then you need to make these A.S.A.P. recipe below. - INGREDIENTS - 1.5 cups rolled oats - 1 tblsp cacao powder - 1 cup pitted dates - 1 tsp hemp protein powder - Zest + juice of 1 lemon - Drizzle of maple syrup - 2 good tblsp coconut oil(Oats+ cacao + coconut oil @macro_wholefoods) --METHOD - I like to whiz dates first - then add all ingredients 1 by 1 in a high speed blender.Roll & refrigerate for approx 10 or so mins. Eat within 5 days but in my case they don't even last 1 haha

Baked egg in a hole
Wanting something different for breakfast? Try this easy baked egg in a hole.INGREDIENTS -Sourdough or your favourite bread -Fresh Eggs -Dried Basil -Parmesan -Cracked pepper-METHOD-preheat oven 180°Toast bread slightly push down the inside right to the edge -Crack egg into well sprinkling parmesan all around the yolk - Oven for approx 8 to 10 mins for a runny yolk -Then sprinkle with your favourite dried or fresh herbs

Potato Galette
INGREDIENTS -Evoo - 4x White & 4x red potatoes sliced thin (slice length ways to get the circles) -Sea salt + cracked pepper -Fresh rosemary + chives & basil chopped- 3 cloves of garlic -1 large onion diced -Cooking cream & Greek yoghurt for topping Parmesan cheese (optional ).- Pre heat oven at 130° cook for 2 hours - METHOD -Drizzle some olive oil in your dish (I used an oven proof frypan)Slice and layer your potato going around the dish , between each layer place your mix of herbs + onion (not garlic) Keep doing this until you've used them all.Tip.☝️ I use the smaller not so perfect cuts on the bottom - save the best for last.Mix your cooking cream & garlic - (you can also use minced garlic) pour over your potato covering it all.Place in oven and slow cook for the 2 hours.Tip ✌ add your cheese last so it will not burn in the oven.
